If you have someplace in your area that sells commercial ovens, take a trip and look at the oven in person. Seeing an oven online and seeing an oven in person are two different things. You may love the oven when you saw a picture of it, but when you see it in person, it turns out to be totally wrong. No matter where you get your oven, make sure that you understand the warranty and service conditions. If you want more warranties than are offered, ask if there is an extended warranty that you can purchase for your stove. Remember that if you purchase your stove online, you will have to pay shipping costs.
Every restaurant needs a range of cutting knives. Getting a good knife could make all the difference in the world, especially for your chef. The most important knife that you will need is a chef's knife. This knife is used for all slicing, chopping, and cutting. You should find a chef's knife that has at least an 8 - 10 inch blade. The longer the blade, the easier it is to cut as there is more blade. A good knife will have the blade continue all the way through the handle and will be sharp along the entire blade. Then get another two knives including a 6 inch paring knife and a 3 or 4 inch paring knife. A knife of the finest quality will run anywhere from $50 - $100 per knife, so be prepared. The more expensive knives will last a lifetime if you care for them properly.
